How much tamping pressure do you need?
Ask this question anywhere and the answer comes back as 30 lb, usually with a suggestion to practice on a bathroom scale. That figure has a real origin, and it has been carried a long way from the situation it described. This article covers where it came from, what pressure physically does to a bed of coffee, and why the number matters less than the repetition.
Where 30 lb came from
It comes from commercial bar practice. A café basket is deeper, holds a larger dose, and sits in a machine being run hundreds of times a day by someone who does this professionally. In that context a firm, definite tamp is a sensible default, and 30 lb is a convenient thing to teach because it is roughly the force of leaning on something with a straight arm.
What traveled was the number. What did not travel was the basket. A domestic double basket holding 15 to 20 grams behaves differently from a commercial one holding 21, and the person using it is making two coffees rather than two hundred. The advice was never wrong; it was answering a different question.
What pressure actually does
Tamping has one physical job: make the bed dense enough and uniform enough that pressurized water cannot push channels through it. Once the grounds are packed to the point where they stop moving under load, that job is done. Further compression does not meaningfully continue to reduce the gaps between particles, because coffee grounds are not infinitely compressible.
This is why the shots do not keep changing as you press harder. Between five and fifteen pounds you are still completing the job. Somewhere past that you have completed it, and the extra effort goes into your wrist rather than the coffee.

The variable that actually moves your shots
Here is the part worth internalizing. Pressing at 20 lb and 30 lb on two consecutive days will change your shot more than pressing at 15 lb both days. The absolute figure sets a baseline; the variation is what you taste.
That is inconvenient, because pressure is the one espresso variable with no readout. You can weigh a dose, time a shot and read a grind setting. You cannot see what your arm did. Most people discover their tamp was drifting only when they eliminate it as a variable and their shots settle down.
There are two ways to eliminate it. Practice until your hand is reliable, which works and takes months of daily repetition. Or use a tamper with a spring that gives at a fixed load, which is a mechanical stop rather than a skill. Neither is cheating; they solve the same problem at different points.
The bathroom scale exercise, and its limits
The standard way to learn what a given force feels like is to tamp onto a bathroom scale and watch the reading. It is genuinely useful once, because most people are surprised by how little effort fifteen pounds takes and how much thirty takes.
Where it misleads is what happens next. A scale on a counter at counter height is not the same posture as a portafilter held in one hand, and the reading tells you nothing about whether you pressed square. People come away confident about the number and unchanged about the angle, which is the variable that was costing them shots.
Use it as a calibration for your own sense of effort, once or twice, then stop. What you actually want is not the ability to hit thirty pounds on demand; it is the ability to hit the same figure every single morning without thinking about it. Those are different skills, and only the second one shows up in the cup.
Why we chose 15 lb
Our tamper is calibrated to 15 lb, which sits at the lower end of the useful range and is deliberate. It is enough to hold a domestic bed against nine bars, and it is light enough to deliver comfortably first thing in the morning, which is when consistency usually breaks down. A load you can apply without effort is a load you apply the same way every time.

Before you change your pressure, check these
If your shots are inconsistent, pressure is rarely the first thing to fix. Work through these in order.
Is the tamper the right size? An undersized tamper leaves an untamped ring at the edge of the basket, and that ring is where the water goes. This single issue causes more channelling than any pressure error. The size guide covers how to measure.
Is the bed level before you press? A calibrated tamper applies its fixed load just as faithfully to a slope. Level first, always.
Is the dose consistent? Two grams of difference changes the depth of the bed, which changes how the tamper sits and how the shower screen meets the puck. Weigh the dose before you blame the tamp.
Is the grind in range? If the shot runs in twelve seconds, no pressure fixes it. Grind finer. Pressing harder to slow a fast shot is the most common wrong turn in home espresso, and it produces bitterness rather than balance.
